I immediately thought of Spicy Braaied Chicken Wings when my friend and talented singer, songwriter and musician, Justin Serrao, sent me some of his brand new and delicious Oom Jussie’s Chillie Sousie to try out!
Not only is he at home on stage with his guitar in hand but apparently he is just as comfortable in the kitchen with a wooden spoon in hand!
I was super excited to firstly taste each of the sauces and secondly to create delicious recipes to share with you. The range includes Red Sousie, Jalapeno, Green Chilli, Red Chilli and Habanero.
The Red Sousie is the mildest in terms of spice, therefore we created the first recipe with it. It’s a tasty, garlicy, lemony, zesty and mildly spicy sauce. In my humble opinion it will literally go with anything from pizza to braaivleis but most of all I wanted to make Spicy Braaied Chicken Wings!
Now, I LOVE chicken wings, I mean, who doesn’t? Grilled, baked, fried, braaied…
It was such a beautiful, sunny Winter’s day out today so we decided to fire up the Weber and braai some chicken wings outside!
OK, so let me take you through it step by step.
PREPARE THE CHICKEN WINGS
Firstly you need to prepare the chicken wings by cutting it into what I call wingettes and drummettes. Start by cutting off the wing tip, don’t throw it away, keep it in the freezer for another day. We call it “chicken snacks”. Next, find the joint between the wingette and drummette and cut through it, it should cut through easily. Now repeat this step around 20 or 30 times, depending on how many people you are feeding. Place the wings in a bowl with a lid.

MAKE THE MARINADE
I used paprika, onion powder, garlic powder, freshly ground black pepper and Maldon sea salt, a teaspoon of each. I also added a tablespoon of brown sugar. It caramelizes on the braai and creates beautiful char lines. I kept the spices simple as not to overpower the flavours of the Oom Jussie’s Chillie Sousie.
Add all the spices to the bowl along with a drizzle of olive oil and a squeeze of fresh lemon. Now put the lid on your dish and shake it until the wings are covered with the marinade. Keep it in the fridge while you get the fire started.
WHILE WE WAITED FOR THE FIRE…
… I made some potato crisps.
Here’s how:
- Pre-heat the oven to 180˚C
- Wash your potatoes
- Slice the potatoes thinly using a mandolin or a knife
- Place the potato slices on a kitchen towel in a single layer and pat dry
- Drizzle a baking tray with some olive oil and spread out using your hands or a basting brush
- Place the potato slices on the baking tray in a single layer without letting it overlap
- Drizzle a little more olive oil over the potatoes
- Sprinkle it liberally with Maldon sea salt
- Place the baking tray in the oven on the bottom rack and bake for 20-25 minutes until crispy and golden brown (keep an eye on these, ovens vary)
LET’S BRAAI!
Place the marinated chicken wings on the grill over medium heat.
Turn the wings constantly because the brown sugar caramelizes quickly and you don’t want it to burn!
When it’s just about ready baste it with Oom Jussie’s Red Sousie, yummm!!
LET’S EAT!
I also made some blue cheese dipping sauce using sour cream, mayonnaise, blue cheese, salt and pepper to go with the Spicy Braaied Chicken Wings. It turned out to be pretty delicious with the potato crisps as well!
